Can I order in advance?
Yes, and it's worth doing for whole fish, large cuts and anything seasonal. Call or email us with what you need and we'll set it aside.
Is there a minimum order?
No minimum if you're shopping at the store. Wholesale and export orders work on volume — get in touch and we'll talk numbers.
How should I store it?
Keep it frozen at -18°C or below until you're ready to cook. Don't leave it sitting out.
What's the best way to thaw it?
Slowly, in the fridge at 0–4°C — overnight is ideal. Don't use hot water or the microwave. Both cook the outside before the middle is ready.
How long can I keep it once thawed?
Cook it the same day. Keep it covered and chilled until you do.
Can I refreeze it?
No. Refreezing wrecks the texture and isn't safe. Thaw only what you plan to cook.
How long does it keep in the freezer?
24 months from packing at -18°C or below. The best-before date is printed on every pack.
How do I know it's still good?
Check the date and look at the pack.
Should I rinse it before cooking?
A quick rinse under cold water after thawing is fine. Pat it dry before it hits the pan — wet fish steams instead of searing.
Do I need to thaw it first?
For most cuts, yes — fillets and portions cook more evenly from thawed. Shrimp, squid rings and clams can go straight into a hot pan or pot from frozen if you're pressed for time.
Is it ready to cook?
Yes. Everything is cleaned, cut and packed to size. Thaw, season, cook.
How much should I buy per person?
Around 150–200g of fillet per adult, or 300–400g of whole fish, since the head and bone carry weight.
Do you have recipes?
Yes — have a look at our Recipes page. Guyanese classics and simple everyday cooking, written for the cuts we actually sell.
Where does it come from?
Guyanese and Surinamese waters, wild caught by our own fleet. Anything farmed or imported is stated clearly on the pack and on the product page.
Is it fresh or frozen?
Both, in a way. It's landed fresh and flash frozen within hours of harvest — that holds the texture and flavour far better than fish sitting on ice for days on its way to a counter.
Isn't fresh better than frozen?
Usually not. Fish at a counter may be several days off the boat. Ours is frozen at its peak and stays that way until you thaw it.
Who processes and packs it?
We do. Fresh Off The Hook is the retail side of a family business that owns the wharf, the ice factory, the fuelling station and the processing plant. The fish never leaves our hands between the boat and the pack.
Do you use preservatives or additives?
No. Seafood, and salt in our salted lines. Nothing else.
What's the difference between cutlets, slices, fillets and cuts?
Cutlets are the collarbone piece, cut when the fish is filleted. Slices are thinner cross-sections also known as steaks. Fillets are boneless sides. Cuts are portioned pieces sized for the pot.
How are sizes graded?
Our snapper is graded small, medium and large by weight. For everything else, the pack tells you the net weight and the cut.
Is your seafood safe for pregnant women and children?
Seafood is a good source of protein and omega-3. Larger predatory species carry more mercury than smaller ones, so follow your doctor's guidance on how much and how often.
Is your fishing sustainable?
We fish our own grounds and depend on them staying productive. That means legal gear, legal seasons and no interest in fishing a stock out. There's more on our About Us page.
Is there an allergen warning?
Yes. All our products contain seafood, and shellfish and fin fish are handled in the same facility.
Do you supply restaurants, hotels and shops?
Yes. Send us the species, cut and volume you need and we'll come back with pricing and lead times.
Do you export?
Yes, through our group companies — R&S Fishing Enterprise in Guyana, Gabs Fish Export and Amrixa Fisheries in Suriname.
